Description

Delightfully sweet and nutty, these Pecan Pie Bars are an easy twist on a classic dessert, perfect for any occasion.


Ingredients

  • 1 1/4 cups unsalted butter room temperature
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon kosher salt
  • 1 cup unsalted butter
  • 1 cup light corn syrup or maple syrup
  • 1 1/4 cups light brown sugar packed
  • 1/2 cup cornstarch
  • 4 egg yolks
  • 1/2 cup heavy cream
  • 1 pound pecans roasted and roughly chopped
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together 1 1/4 cups of room temperature unsalted butter and 1/3 cup granulated sugar until light and fluffy.
  3. Beat in 2 large eggs and 1 teaspoon of vanilla extract.
  4. In another bowl, mix together 2 1/4 cups all-purpose flour, 1/4 teaspoon baking powder, and 1/8 teaspoon kosher salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until combined.
  6. Press the crust mixture into the prepared baking pan and bake for 15 minutes.
  7. In a saucepan, melt 1 cup of unsalted butter with 1 cup of light corn syrup (or maple syrup) and 1 1/4 cups of packed light brown sugar over medium heat, stirring until smooth.
  8. In a bowl, whisk together 1/2 cup of cornstarch, 4 egg yolks, and 1/2 cup of heavy cream until smooth.
  9. Gradually mix the butter mixture into the egg mixture until well combined.
  10. Fold in 1 pound of roasted and roughly chopped pecans, along with 1/8 teaspoon salt and 1 teaspoon of vanilla extract.
  11. Pour the pecan topping over the pre-baked crust and bake for an additional 25 minutes, or until set.
  12. Allow to cool completely before slicing into bars and serving.

Notes

For a more intense flavor, use roasted pecans. These bars can be stored in an airtight container for up to one week.
