This Pecan Pie Baked Oatmeal is a delightful, wholesome twist on traditional pecan pie, perfect for breakfast or a cozy dessert.


Ingredients

  • 2 cups rolled oats certified gluten-free
  • if needed
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk I use unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 1 egg or 1 chia or flax egg* for vegan
  • 2 Tablespoons butter vegan butter
  • or coconut oil
  • melted
  • 1 1/2 teaspoons vanilla extract
  • 2 Tbsp. butter or vegan butter
  • 1/4 cup pure maple syrup
  • 1 cup pecans roughly chopped or whole

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, maple syrup, egg (or vegan alternative), melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. In a small saucepan, melt the butter for the topping over medium heat, then stir in the maple syrup and pecans until well coated.
  7. Spread the pecan topping over the baked oatmeal mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until set and golden brown.
  9. Let cool slightly before slicing and serving.

Notes

For a vegan option, substitute butter with vegan butter and use a chia or flax egg. Serve warm or at room temperature.
