- 3 large eggs
- 1–½ cups sugar
- ¾ cup vegetable oil
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoon baking powder
- 2 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 cups ripe pears
- peeled & finely chopped
- 1 teaspoon lemon juice
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the eggs, sugar, vegetable oil, and vanilla extract until well combined.
- In another bowl, mix the all-purpose flour, baking powder, ground cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped pears, lemon juice, and walnuts until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra flavor, you can add a pinch of nutmeg or substitute some walnuts with pecans or almonds.
