- 1 (3 ounce) package vanilla pudding mix
- 3 Tablespoons butter
- 1 egg
- 1/2 cup milk
- 1 (28 ounce) can sliced peaches
- 1 (8 ounce) package cream cheese
- 1/2 cup granulated sugar
- 3 Tablespoons reserved peach juice
- 1 additional Tablespoon sugar
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease a pie dish.
- In a bowl, mix the flour, salt, baking powder, and pudding mix together.
- In a separate bowl, cream together the butter, egg, and milk until well combined. Stir in the dry ingredients until just mixed.
- Pour the mixture into the prepared pie dish and spread evenly.
- Layer the sliced peaches over the pie crust.
- In a bowl, mix the softened cream cheese, granulated sugar, and reserved peach juice until smooth. Spread over the peaches.
- In a small bowl, mix the additional sugar and cinnamon, and sprinkle it over the top.
- Bake in the preheated oven for 30 minutes or until the top is golden and set.
- Allow to cool before slicing and serving.
Notes
For a fresher taste, use ripe, in-season peaches when possible. Adjust the sugar based on the sweetness of your peaches.
