Ingredients

  • 1 tablespoon (15 g) unsalted butter cold
  • 6 teaspoons (5 g) light brown sugar
  • 3 fresh peaches
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup (130 g) granulated sugar
  • 1/3 cup (75 g) unsalted butter at room temperature
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup (120 ml) buttermilk at room temperature

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin with non-stick cooking spray.
  2. Melt the cold butter and mix it with the brown sugar. Spoon this mixture into the bottom of each muffin cup.
  3. Slice the peaches and arrange them on top of the brown sugar mixture in each cup.
  4. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In another bowl, cream together the granulated sugar and room temperature butter until light and fluffy.
  6. Add in the egg, vanilla extract, and buttermilk, mixing until well combined.
  7. Gradually incorporate the dry ingredients into the wet mixture, stirring just until blended.
  8. Spoon the batter evenly over the peaches in each muffin cup.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
