  • 2 tablespoon salted butter
  • ½ cup light brown sugar
  • 4 teaspoon cornstarch
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • 10 egg roll wrappers
  • 2 tablespoon water
  • vegetable oil
  • powdered sugar
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla bean paste
  • 23 tablespoons milk
  • pinch salt

Instructions

  1. In a medium bowl, combine chopped peaches, lemon juice, brown sugar, cornstarch, cinnamon, and vanilla extract. Mix until well combined.
  2. Melt butter in a pan over medium heat and add the peach mixture. Cook for about 5-7 minutes, stirring occasionally until the mixture thickens. Remove from heat and let cool.
  3. Lay an egg roll wrapper on a clean surface with a point facing you. Spoon 2 tablespoons of the peach filling onto the center of the wrapper.
  4. Moisten the edges of the wrapper with water, fold the bottom point over the filling, then fold in the sides, and roll up tightly to seal.
  5. Heat vegetable oil in a deep skillet over medium-high heat. Fry egg rolls in batches for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
  6. For the dipping sauce, whisk together powdered sugar, vanilla bean paste, milk, and a pinch of salt until smooth.
  7. Serve the peach cobbler egg rolls warm, dusted with powdered sugar, alongside the vanilla bean dipping sauce.

Notes

For a richer flavor, you can use fresh peaches when they are in season. If using frozen or canned peaches, make sure to drain them well.
