- 1 tablespoon fresh lemon juice
- 2 tablespoon salted butter
- ½ cup light brown sugar
- 4 teaspoon cornstarch
- ½ teaspoon ground cinnamon

- 10 egg roll wrappers
- 2 tablespoon water

- ¾ cup powdered sugar
- ½ teaspoon vanilla bean paste
- 2–3 tablespoons milk

Instructions
- In a medium bowl, combine chopped peaches, lemon juice, brown sugar, cornstarch, cinnamon, and vanilla extract. Mix until well combined.
- Melt butter in a pan over medium heat and add the peach mixture. Cook for about 5-7 minutes, stirring occasionally until the mixture thickens. Remove from heat and let cool.
- Lay an egg roll wrapper on a clean surface with a point facing you. Spoon 2 tablespoons of the peach filling onto the center of the wrapper.
- Moisten the edges of the wrapper with water, fold the bottom point over the filling, then fold in the sides, and roll up tightly to seal.
- Heat vegetable oil in a deep skillet over medium-high heat. Fry egg rolls in batches for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
- For the dipping sauce, whisk together powdered sugar, vanilla bean paste, milk, and a pinch of salt until smooth.
- Serve the peach cobbler egg rolls warm, dusted with powdered sugar, alongside the vanilla bean dipping sauce.
Notes
For a richer flavor, you can use fresh peaches when they are in season. If using frozen or canned peaches, make sure to drain them well.
