Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the diced peaches and, if using, the rolled oats and chopped nuts.
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Sprinkle cinnamon sugar on top of each cookie.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden and the center is set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a more intense peach flavor, let the diced peaches sit with a bit of sugar for 15 minutes before adding them to the dough. Feel free to customize with your favorite nuts or without oats for a different texture.
