  • diced

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the diced peaches and, if using, the rolled oats and chopped nuts.
  7. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Sprinkle cinnamon sugar on top of each cookie.
  9. Bake in the preheated oven for 12-15 minutes or until the edges are golden and the center is set.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
