Description

Ingredients

  • 2 cups (280g) ground graham crackers (about 2 sleeves)
  • 1/3 cup (70g) granulated sugar
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/2 cup (110g) unsalted butter
  • melted
  • 4 8oz blocks full fat cream cheese
  • room temp
  • 1 1/4 cup (255g) granulated sugar
  • 2 tbsp cornstarch
  • 3 large eggs + 1 egg yolk
  • room temp
  • 2 tsp vanilla bean paste
  • or 1 tbsp vanilla extract
  • 1 cup (250g) sour cream or full fat Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan by greasing it lightly.
  2. In a bowl, mix the crumble ingredients: flour, brown sugar, cinnamon, salt, and cold butter until crumbly. Set aside.
  3. In a separate bowl, toss peach slices with melted butter, brown sugar, and cinnamon. Set aside.
  4. For the graham cracker crust, mix ground graham crackers, granulated sugar, cinnamon, salt, and melted butter. Press into the bottom of the prepared pan.
  5. For the cheesecake batter, beat cream cheese and granulated sugar until smooth. Add cornstarch, eggs, yolk, and vanilla, mixing until combined. Stir in sour cream or Greek yogurt.
  6. Pour cheesecake batter over the crust, then layer the peaches on top. Sprinkle the crumble mixture over the peaches.
  7. Bake for 30-35 minutes until set and the top is lightly browned. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

For best results, use slightly underripe peaches for added texture and flavor. Ensure cream cheese is at room temperature for smoother batter.
