Description
This Peach Chiffon Pie is a light and fluffy dessert that beautifully showcases the sweetness of ripe peaches, perfect for warm weather.

- 1 cup graham cracker crumbs
- 4 tbsp melted butter
- 1 cup whipping cream
- 1 tsp vanilla
- 2 cups peach puree from 6 – 7 ripe
- peeled
- pitted peaches
- 1 tbsp lemon juice
- 2 drops red food coloring
- 2 envelopes unflavored gelatin
- 3 large egg whites
- 1 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and combine graham cracker crumbs with melted butter, then press into the bottom of a pie dish to form the crust. Bake for 10 minutes and then allow to cool.
- In a skillet, combine peach puree, lemon juice, and food coloring; heat gently. In a separate bowl, dissolve gelatin in a bit of water, then stir into the peach mixture. Allow to cool.
- Whip the cream with vanilla until soft peaks form. In another bowl, beat egg whites until soft peaks form, slowly add sugar, and continue to beat until stiff peaks form.
- Fold the peach mixture into whipped cream, then carefully fold in the sugar and egg whites until incorporated.
- Pour the filling into the cooled crust and refrigerate for at least 4 hours or until set. Serve chilled.
Notes
For a more intense peach flavor, you can use fresh peaches in season. Make sure the crust is completely cooled before adding the filling.
