Description

This Peach Chiffon Pie is a light and fluffy dessert that beautifully showcases the sweetness of ripe peaches, perfect for warm weather.


Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 1 cup whipping cream
  • 1 tsp vanilla
  • 2 cups peach puree from 6 – 7 ripe
  • peeled

  • 1 tbsp lemon juice
  • 2 drops red food coloring
  • 2 envelopes unflavored gelatin
  • 3 large egg whites
  • 1 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and combine graham cracker crumbs with melted butter, then press into the bottom of a pie dish to form the crust. Bake for 10 minutes and then allow to cool.
  2. In a skillet, combine peach puree, lemon juice, and food coloring; heat gently. In a separate bowl, dissolve gelatin in a bit of water, then stir into the peach mixture. Allow to cool.
  3. Whip the cream with vanilla until soft peaks form. In another bowl, beat egg whites until soft peaks form, slowly add sugar, and continue to beat until stiff peaks form.
  4. Fold the peach mixture into whipped cream, then carefully fold in the sugar and egg whites until incorporated.
  5. Pour the filling into the cooled crust and refrigerate for at least 4 hours or until set. Serve chilled.

Notes

For a more intense peach flavor, you can use fresh peaches in season. Make sure the crust is completely cooled before adding the filling.
