- 8 oz fresh mozzarella (pearls or a ball cut into 1/4-inch cubes)
- 3 medium peaches
- pitted and diced into 1/2-inch cubes
- 2 cups cherry tomatoes

- 1 cup firmly-packed arugula
- 1/2 cup fresh basil leaves
- minced
- 1/3 cup balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1/3 cup olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, drain, and set aside to cool.
- In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, dried oregano, and olive oil. Season with salt and pepper to taste.
- In a large bowl, combine the cooled pasta, fresh mozzarella, peaches, cherry tomatoes, arugula, and minced basil.
- Drizzle the balsamic dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
