Description
This Peach and Nectarine Jam (Marmelada Rodakino & Nektarinia) is a deliciously fruity preserve that captures the essence of summer in every jar. Perfect for spreading on toast or using in desserts.

- 1 kilo peaches
- 1 kilo nectarines (minus 330 grams stones
- total net weight 1670 grams)
- 1550 grams sugar
- 2 tbsp lemon zest
- ¼ cup lemon juice
- 4 fragrant geranium leaves
- 1 cinnamon stick
- 6 – 7 cloves
- 1 sachet (25 grams) fruit pectin
Instructions
- Wash, peel, and chop the peaches and nectarines, discarding the stones.
- In a large pot, combine the chopped fruits, sugar, lemon zest, and lemon juice. Stir well.
- Add the fragrant geranium leaves, cinnamon stick, and cloves to the pot.
- Bring the mixture to a boil over medium heat, stirring frequently until the sugar dissolves.
- Once boiling, add the fruit pectin according to the package instructions and keep stirring.
- Let it boil for about 10-15 minutes until the jam thickens, skimming off any foam that forms on top.
- Perform a gel test by placing a spoonful of the jam on a cold plate to see if it sets.
- Once ready, remove from heat and discard the geranium leaves, cinnamon stick, and cloves.
- Pour the hot jam into sterilized jars and seal immediately.
- Allow the jam to cool completely at room temperature before storing it in the refrigerator.
Notes
Ensure your jars are properly sterilized to ensure the longevity of your jam. This recipe can be adjusted with more or less sugar depending on your sweetness preference.
