Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a delicious and easy meal featuring juicy chicken breasts, crispy red potatoes, and tender green beans, all baked to perfection on one pan.


Ingredients

  • lb chicken breast (about 34 pieces)
  • approx. 1 inch thick
  • 2 Tbsp olive oil
  • 2 garlic cloves
  • minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs
  • Italian or plain
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt
  • 2 lb red potatoes
  • cut into bite sized pieces
  • 12 garlic clove
  • minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • salt and pepper to taste
  • 1 lb fresh green beans
  • ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove
  • minced
  • 1 Tbsp parmesan (optional)
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together 2 Tbsp olive oil, 2 minced garlic cloves, ⅓ cup grated parmesan, ⅓ cup breadcrumbs, cracked pepper, and sea salt. Coat the chicken breasts in this mixture.
  3. Place the chicken on one side of a sheet pan.
  4. In another bowl, toss the red potatoes with 2 Tbsp olive oil, 1-2 minced garlic cloves, 2 Tbsp grated parmesan, salt, and pepper. Spread the potatoes on the other side of the sheet pan.
  5. Bake in the preheated oven for 15 minutes.
  6. While the chicken and potatoes are baking, prepare the green beans by tossing them with 1 Tbsp olive oil, 1 minced garlic clove, optional parmesan, salt, and pepper.
  7. After 15 minutes, add the green beans to the sheet pan and return to the oven.
  8. Bake for an additional 15 minutes, or until the chicken is cooked through and the potatoes are tender.
  9. Remove from oven and let rest for a few minutes before serving.

Notes

For extra flavor, you can add Italian seasoning to the breadcrumbs. Adjust the cooking time if the chicken is thicker than 1 inch.
