Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
- In a skillet, sauté chopped onion and garlic until softened and fragrant.
- In a large bowl, combine ground chicken, sautéed onion and garlic, seasoned breadcrumbs, Parmesan cheese, Italian seasoning, fresh parsley, milk, and egg. Mix until just combined.
- Form half of the meat mixture into the base of the loaf pan, creating a well in the center for the mozzarella cheese strings.
- Place the mozzarella cheese strings in the center and then top with the remaining meat mixture, sealing the edges.
- Spread marinara sauce on top of the meatloaf.
- In a small bowl, mix panko breadcrumbs with melted butter and sprinkle over the top.
- Bake for 30-35 minutes, or until the meatloaf is cooked through and the top is golden brown.
- Allow to rest for a few minutes before slicing and serving.
Notes
Feel free to substitute the ground chicken with turkey or lean beef for a different flavor. Pair with a side salad for a complete meal.
