- 1/2 head cauliflower
- cut into bite sized florets
- 1 1/2 cups panko bread crumbs
- Kikkoman brand preferred for even baking
- 3/4 cup finely ground Parmesan cheese
- 2 large eggs

- 1 tbsp fresh parsley

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the cauliflower florets with the whisked eggs until well coated.
- In another bowl, combine the panko bread crumbs and Parmesan cheese. Toss the coated cauliflower florets in the breadcrumb mixture until fully covered.
- Arrange the coated cauliflower bites in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, or until golden brown and crispy, turning halfway through.
- Serve hot with marinara sauce for dipping and garnish with fresh parsley if desired.
Notes
For best results, ensure the cauliflower is well-drained after washing to prevent sogginess. Adjust the seasoning in the breadcrumb mixture to your taste if desired.
