1/2 cup grated Parmesan cheese
1/3 cup breadcrumbs
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the yellow squash into rounds and place them in a mixing bowl.
- Drizzle the olive oil over the squash, then sprinkle with garlic powder and black pepper.
- Toss until the squash is evenly coated with the oil and spices.
- Place the squash on a baking tray lined with parchment paper.
- In a separate bowl, mix the grated Parmesan cheese with the breadcrumbs.
- Sprinkle the Parmesan and breadcrumb mixture evenly over the squash slices.
- Bake in the preheated oven for about 25-30 minutes or until the squash is tender and the topping is golden brown.
- Remove from the oven and let cool slightly before serving.
