Description

4 (6-ounce) haddock fillets defrosted if frozen

Kosher salt to taste

Freshly ground black pepper to taste

1/4 cup all-purpose flour

1 1/2 cups panko breadcrumbs

3 tablespoons finely chopped fresh parsley

2 large eggs

3 tablespoons mayonnaise

1 1/2 teaspoons Creole seasoning or a similar seasoning salt blend

Lemon wedges for serving


Instructions

  • Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or oil.
  • Season the haddock fillets with kosher salt and freshly ground black pepper on both sides.
  • In one bowl, add the all-purpose flour. In another bowl, beat the eggs and mix in the mayonnaise and Creole seasoning.
  • In a third bowl, combine the panko breadcrumbs with chopped parsley.
  • Coat each haddock fillet in flour, then dip in the egg mixture, and finally coat in the panko breadcrumb mixture, pressing the breadcrumbs onto the fillets to adhere.
  • Place the coated fillets on the prepared baking sheet and bake for 20-25 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  • Serve hot with lemon wedges on the side.

Notes

For extra flavor, feel free to add other herbs or spices to the breadcrumb mixture. Make sure not to overcrowd the baking sheet for best results.
