These Pancake Mini Muffins are a delightful twist on classic pancakes, perfect for breakfast or a snack.
Ingredients

1 cup all-purpose flour
1 teaspoon baking powder
1 tablespoon cane sugar
1 cup whole milk
3 tablespoons butter
melted and slightly cooled
1 egg
1 teaspoon vanilla extract
¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a large mixing bowl, combine the all-purpose flour, baking powder, cane sugar, and salt.
- In another bowl, whisk together the milk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
