- 7 cups cubed french bread or sourdough
- 6 eggs
- 2 cups milk
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- plus more for topping
- 1 tbsp + 2 tsp pumpkin pie spice
- 1/2 cup brown sugar
- 1/2 cup chopped walnuts
- 2/3 cup finely diced peeled and cored apples
- 1 tsp cinnamon
- 2 tbsp butter
- melted
Instructions
- In a large bowl, whisk together eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, brown sugar, and cinnamon until smooth.
- Grease a 9×13-inch baking dish with melted butter. Layer half of the cubed bread in the dish, followed by half of the apples and walnuts.
- Pour half of the egg mixture over the bread layer. Repeat the process with the remaining bread, apples, walnuts, and egg mixture.
- Cover the dish with plastic wrap and refrigerate overnight.
- Preheat oven to 350°F (175°C). Remove the plastic wrap and bake for 30-35 minutes, or until the top is golden and set.
- Serve warm, drizzled with extra maple syrup if desired.
Notes
For best results, let the dish sit in the refrigerator overnight to allow the flavors to meld.
