  • 7 cups cubed french bread or sourdough
  • 6 eggs
  • 2 cups milk
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • plus more for topping
  • 1 tbsp + 2 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts
  • 2/3 cup finely diced peeled and cored apples
  • 1 tsp cinnamon
  • 2 tbsp butter
  • melted

Instructions

  1. In a large bowl, whisk together eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, brown sugar, and cinnamon until smooth.
  2. Grease a 9×13-inch baking dish with melted butter. Layer half of the cubed bread in the dish, followed by half of the apples and walnuts.
  3. Pour half of the egg mixture over the bread layer. Repeat the process with the remaining bread, apples, walnuts, and egg mixture.
  4. Cover the dish with plastic wrap and refrigerate overnight.
  5. Preheat oven to 350°F (175°C). Remove the plastic wrap and bake for 30-35 minutes, or until the top is golden and set.
  6. Serve warm, drizzled with extra maple syrup if desired.

Notes

For best results, let the dish sit in the refrigerator overnight to allow the flavors to meld.
