Ingredients

  • 3 lbs Beef Chuck Roast
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 3 cups Low-Sodium Beef Broth
  • 1/2 cup Soy Sauce
  • 1 large Yellow Onion
  • 4 cloves Garlic
  • 6 Crusty Hoagie Rolls
  • 12 slices Provolone Cheese
  • 1 bag Frozen French Fries

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and black pepper, then sear it on all sides until browned. Remove the roast and set aside.
  2. In a slow cooker, combine the beef broth, soy sauce, sliced onion, and minced garlic. Add the seared beef roast to the slow cooker, covering it with the broth mixture.
  3. Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
  4. Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the beef to the slow cooker to soak up more juices.
  5. Preheat the broiler. Split the hoagie rolls and place them on a baking sheet. Fill each roll with shredded beef and top with provolone cheese.
  6. Broil in the oven until the cheese is melted and bubbly, about 2-3 minutes.
  7. Serve the sandwiches with a side of baked French fries and au jus for dipping.
