Ingredients

Instructions
- In a large pot, sauté chopped onion in a bit of olive oil until it’s slightly crisp.
- Add the Moroccan-inspired spices, stirring for a minute until fragrant.
- Stir in the rinsed quinoa, broth, and chickpeas, bringing the mixture to a boil.
- Reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and liquid is absorbed.
- Remove from heat and mix in the dried cranberries, chopped parsley, and sliced almonds before serving.
Notes
For added flavor, toast the almonds before adding them to the salad. This dish can be served warm or chilled.
