Ingredients
1 pound chicken drumsticks can sub chicken thighs or breasts
2 tablespoon ghee
2 clove garlic minced
â…“ cup fresh oregano chopped
2 teaspoon fresh thyme minced
2 teaspoon fresh sage minced
salt & pepper to taste
3.5 cups patty pan squash ends trimmed and quartered
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix chicken drumsticks with ghee, minced garlic, fresh herbs, salt, and pepper until well coated.
- Arrange the chicken drumsticks on one side of a baking sheet.
- On the other side, place the quartered patty pan squash. Drizzle with olive oil and season with salt and pepper.
- Bake for 30-35 minutes or until the chicken is cooked through and the squash is tender.
