Ingredients

1 pound chicken drumsticks can sub chicken thighs or breasts

2 tablespoon ghee

2 clove garlic minced

â…“ cup fresh oregano chopped

2 teaspoon fresh thyme minced

2 teaspoon fresh sage minced

salt & pepper to taste

3.5 cups patty pan squash ends trimmed and quartered


Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine the chicken drumsticks, ghee, minced garlic, oregano, thyme, sage, salt, and pepper. Mix well to coat the chicken evenly.
  • Place the seasoned chicken on a baking sheet or in a large oven-safe pan.
  • In the same bowl, add the quartered patty pan squash and toss with any remaining ghee and seasonings.
  • Arrange the patty pan squash around the chicken on the baking sheet.
  • Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the squash is tender.
