Description

This 30-Minute, One-Pan Creamy Chicken Orzo is a deliciously simple dish that combines juicy chicken, tender orzo, and fresh vegetables, all cooked in a creamy sauce for a comforting meal.


Ingredients

  • 1.5 lb chicken breasts skinless
  • boneless
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 cup orzo uncooked
  • 5 cloves garlic minced
  • 1 tablespoon olive oil
  • 10 oz cherry tomatoes sliced in half
  • 2 cups chicken stock
  • ¼ teaspoon salt
  • 5 oz fresh spinach
  • ½ cup heavy cream
  • ¼ cup basil pesto

Instructions

  1. Season the chicken breasts with smoked paprika, Italian seasoning, salt, and pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat and add the chicken. Cook for about 6-7 minutes on each side until fully cooked, then remove and set aside.
  3. In the same pan, add 1 tablespoon of olive oil and the minced garlic. Sauté for 1 minute until fragrant.
  4. Add the cherry tomatoes to the pan and cook until they start to soften, about 3-4 minutes.
  5. Stir in the orzo and chicken stock, along with ¼ teaspoon of salt. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the orzo is cooked.
  6. While the orzo is cooking, chop the chicken into bite-sized pieces.
  7. Once the orzo is done, add the chicken, spinach, heavy cream, and basil pesto to the skillet. Stir well to combine and heat through for an additional 2-3 minutes.
  8. Serve warm and enjoy your creamy chicken orzo!

Notes

Feel free to add other vegetables or adjust the seasoning to your preference. This dish is great for meal prep and can be reheated easily.
