- 6 cups chicken broth
- 2 cups milk
- 1 cup carrots shredded
- 2 tsp parsley flakes
- Salt and pepper for seasoning
- 1 package 16 ounces mini potato gnocchi
- 1 cup fresh spinach chopped
Instructions
- In a large pot, heat olive oil and 2 tablespoons of butter over medium heat until melted.
- Add the chopped onions and minced garlic, and sauté until soft and fragrant, about 3-4 minutes.
- Sprinkle the flour over the onion mixture and stir for 1 minute to create a roux.
- Gradually whisk in the chicken broth and milk, stirring constantly until the mixture thickens.
- Add the shredded chicken, carrots, parsley flakes, salt, and pepper to the pot, stirring to combine.
- Bring the soup to a gentle simmer and cook for about 10 minutes.
- Stir in the gnocchi and cook for an additional 3-5 minutes until the gnocchi are tender.
- Remove from heat and fold in the chopped spinach just before serving.
