- 3 can peaches in lite syrup 29 ounces each
- ½ cup salted butter
- 1 cup granulated sugar plus more if needed
- ½ teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon pure vanilla extract
- 3 teaspoons all-purpose flour
- 2 ½ cups all-purpose flour
- 2 teaspoons granulated sugar
- 1 teaspoon salt
- 1 cup very cold unsalted butter cut in cubes
- ½–⅔ cup very cold water
- 1 egg beaten with 1 teaspoon of water
- Ground cinnamon for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine the peaches, butter, sugar, cinnamon, nutmeg, vanilla extract, and flour over medium heat until well mixed and warmed through.
- In a mixing bowl, combine the flour, sugar, and salt for the crust. Cut in the cold unsalted butter until the mixture resembles coarse crumbs.
- Gradually add cold water to the flour mixture until the dough comes together. Chill for a few minutes.
- Roll out the dough and fit it into a greased baking dish. Pour the peach filling into the crust.
- Cover with additional crust or lattice if desired, and brush with the beaten egg mixture. Sprinkle with ground cinnamon.
- Bake in the preheated oven for 30 minutes or until the crust is golden brown.
- Let cool slightly before serving.
Notes
If using fresh peaches, peel and slice them into equivalent amounts as canned peaches. Adjust sugar based on sweetness of the peaches.
