Ingredients

Scale
  • 3 can peaches in lite syrup 29 ounces each
  • ½ cup salted butter
  • 1 cup granulated sugar plus more if needed
  • ½ teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon pure vanilla extract
  • 3 teaspoons all-purpose flour
  • 2 ½ cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 cup very cold unsalted butter cut in cubes
  • ½ cup very cold water
  • 1 egg beaten with 1 teaspoon of water
  • Ground cinnamon for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the peaches, butter, sugar, cinnamon, nutmeg, vanilla extract, and flour over medium heat until well mixed and warmed through.
  3. In a mixing bowl, combine the flour, sugar, and salt for the crust. Cut in the cold unsalted butter until the mixture resembles coarse crumbs.
  4. Gradually add cold water to the flour mixture until the dough comes together. Chill for a few minutes.
  5. Roll out the dough and fit it into a greased baking dish. Pour the peach filling into the crust.
  6. Cover with additional crust or lattice if desired, and brush with the beaten egg mixture. Sprinkle with ground cinnamon.
  7. Bake in the preheated oven for 30 minutes or until the crust is golden brown.
  8. Let cool slightly before serving.

Notes

If using fresh peaches, peel and slice them into equivalent amounts as canned peaches. Adjust sugar based on sweetness of the peaches.
