Ingredients

  • 2 ½ cups all-purpose flour
  • 4 tablespoons white sugar
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 large egg
  • ¼ cup cold water
  • 1 tablespoon butter
  • melted
  • 3 pounds fresh peaches – peeled
  • pitted
  • and sliced
  • ¾ cup orange juice
  • ¼ cup lemon juice
  • ½ cup butter
  • 2 cups white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix the flour, 2 tablespoons of sugar, and salt, then cut in the shortening until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the egg with cold water, then stir into the flour mixture until combined.
  4. Roll out two-thirds of the dough and place it into a greased 9×13 inch baking dish.
  5. In another bowl, mix sliced peaches, orange juice, lemon juice, remaining sugar, cornstarch, cinnamon, and nutmeg.
  6. Pour the peach mixture over the crust in the dish.
  7. Roll out the remaining dough and place it over the peach filling, sealing the edges, and cut slits for steam to escape.
  8. Brush the top with melted butter and sprinkle with remaining sugar.
  9. Bake in the preheated oven for 30-35 minutes, or until the crust is golden and filling is bubbling.
  10. Allow to cool slightly before serving.

Notes

Feel free to substitute with frozen peaches if fresh ones are not available. Serve with vanilla ice cream for an extra treat.
