- 2 ½ cups all-purpose flour
- 4 tablespoons white sugar
- 1 teaspoon salt
- 1 cup shortening
- 1 large egg
- ¼ cup cold water
- 1 tablespoon butter
- melted
- 3 pounds fresh peaches – peeled
- pitted
- and sliced
- ¾ cup orange juice
- ¼ cup lemon juice
- ½ cup butter
- 2 cups white sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, mix the flour, 2 tablespoons of sugar, and salt, then cut in the shortening until the mixture resembles coarse crumbs.
- In a separate bowl, beat the egg with cold water, then stir into the flour mixture until combined.
- Roll out two-thirds of the dough and place it into a greased 9×13 inch baking dish.
- In another bowl, mix sliced peaches, orange juice, lemon juice, remaining sugar, cornstarch, cinnamon, and nutmeg.
- Pour the peach mixture over the crust in the dish.
- Roll out the remaining dough and place it over the peach filling, sealing the edges, and cut slits for steam to escape.
- Brush the top with melted butter and sprinkle with remaining sugar.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden and filling is bubbling.
- Allow to cool slightly before serving.
Notes
Feel free to substitute with frozen peaches if fresh ones are not available. Serve with vanilla ice cream for an extra treat.
