Ingredients

  • 2 ½ cups all-purpose flour
  • 4 tablespoons white sugar
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 large egg
  • ¼ cup cold water
  • 1 tablespoon butter
  • melted
  • 3 pounds fresh peaches
  • peeled
  • pitted
  • and sliced
  • ¾ cup orange juice
  • ¼ cup lemon juice
  • ½ cup butter
  • 2 cups white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. In a large bowl, mix together the flour, 2 tablespoons sugar, and salt. Cut in the shortening until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and cold water. Stir into the flour mixture until just combined. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out one dough disc on a floured surface to fit your baking dish. Place it in the dish and pour in the sliced peaches.
  3. In a saucepan, melt ½ cup butter over medium heat. Stir in the orange juice, lemon juice, 2 cups sugar, cornstarch, cinnamon, and nutmeg. Pour this mixture over the peaches.
  4. Roll out the second disc of dough and place it on top of the peach filling. Seal the edges, and cut slits in the top crust to allow steam to escape.
  5. Brush the top with melted butter and sprinkle with the remaining 2 tablespoons of sugar. Bake in the preheated oven for 30-40 minutes or until the crust is golden brown and the filling is bubbly.
  6. Remove from the oven and let cool slightly before serving. Enjoy warm!

Notes

For extra flavor, consider adding a few drops of vanilla extract to the peach filling. Serve with a scoop of vanilla ice cream for a classic touch.
