Instructions
- Start by preparing the graham cracker crust. Mix graham cracker crumbs with melted unsalted butter and press the mixture into the bottom of a greased 9-inch springform pan.
- In a mixing bowl, beat the room temperature full-fat cream cheese with granulated sugar, lemon juice, and pure vanilla extract until smooth.
- In another bowl, whip the heavy whipping cream with powdered sugar until stiff peaks form, then gently fold it into the cream cheese mixture.
- Add the instant powdered strawberry Jell-o to the cream cheese mixture and mix until well combined.
