This No Bake S’mores Ice Cream Cake combines the classic flavors of s’mores with creamy ice cream, making it the perfect summer dessert that requires no baking.
Ingredients

2 cups graham cracker crumbs
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1/2 cup melted butter
2 cups mini marshmallows
2 cups chocolate ice cream
2 cups vanilla ice cream
1/2 cup chocolate syrup
1/2 cup mini chocolate chips
Instructions
- In a mixing bowl, combine the graham cracker crumbs, cocoa powder, sugar, and melted butter; mix well until crumbly.
- Press half of the crumb mixture into the bottom of a 9×13 inch pan to form the crust.
- Scoop the chocolate ice cream on top of the crust and spread evenly; freeze for 15 minutes.
- Spread the vanilla ice cream over the chocolate layer and freeze for another 15 minutes.
- Top with mini marshmallows and drizzle with chocolate syrup.
- Sprinkle mini chocolate chips on top and press down gently.
- Cover and freeze for at least 1 hour before serving.
Notes
For best flavor, let the cake sit at room temperature for about 10 minutes before slicing. Feel free to customize with your favorite toppings.
