Description

These No-Bake Samoa Cookies are a delightful twist on a classic treat, featuring a coconut and caramel base topped with rich chocolate.

Ingredients

Scale
  • 2 cups unsweetened shredded coconut
  • 1 cup soft caramel candies about 20 pieces
  • 2 tablespoons milk or heavy cream for richer flavor
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, melt the soft caramel candies with milk or cream over low heat, stirring until smooth.
  2. Remove from heat and stir in shredded coconut, vanilla extract, and a pinch of salt until well combined.
  3. Press the coconut mixture into a parchment-lined baking dish to form an even layer.
  4. In a microwave-safe bowl, melt chocolate chips with coconut oil or butter in 30-second intervals, stirring until smooth.
  5. Pour the melted chocolate over the coconut layer, spreading it evenly.
  6. Refrigerate for at least 30 minutes until set, then cut into squares or bars to serve.

Notes

For an extra boost of flavor, add a sprinkle of sea salt on top of the chocolate before it sets.
