These No-Bake Pumpkin Pie Energy Balls are the perfect healthy snack, combining the flavors of pumpkin pie with the convenience of a quick, no-bake treat.

- 1/2 cup pumpkin puree
- 1/3 cup nut butter (peanut

- 1 teaspoon vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1 tablespoon chia seeds (optional)
- 1/4 cup mini chocolate chips or chopped nuts (optional)
Instructions
- In a large mixing bowl, combine the old-fashioned oats, pumpkin puree, nut butter, maple syrup, vanilla extract, pumpkin pie spice, and chia seeds if using.
- Mix thoroughly until all ingredients are well combined. If desired, fold in mini chocolate chips or chopped nuts.
- Once the mixture is combined, use your hands to form small balls, about 1 inch in diameter.
- Place the energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to one week.
