  • 8 ounce mascarpone cheese at room temperature
  • 1/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 1/2 cup strong espresso at room temperature
  • 1 package lady fingers
  • cocoa powder for dusting

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form.
  2. Add the mascarpone cheese, sugar, and vanilla extract to the whipped cream, and gently fold until fully combined.
  3. Dip each lady finger into the espresso quickly, ensuring they are soaked but not soggy.
  4. Layer the soaked lady fingers in the bottom of a dish, and spread half of the mascarpone mixture over them.
  5. Repeat the layers with the remaining lady fingers and mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, dust the top with cocoa powder.
