  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups diced fresh nectarines (about 23 medium nectarines)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the milk, vegetable oil, vanilla extract, and egg until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the diced nectarines.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
