This delightful Nectarine and Blueberry Chia Pudding combines the sweetness of ripe nectarines and fresh blueberries with the nutritious power of chia seeds for a healthy, delicious dessert.

- 1 1/2 cup milk of choice
- 6 tbsp chia seeds
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup blueberries
- plus more for topping
- 1 nectarine
- chopped
- 1/2 tsp cinnamon
- honey drizzle on top
Instructions
- In a bowl, whisk together the milk, chia seeds, maple syrup, vanilla extract, and cinnamon until well combined.
- Stir in the blueberries and chopped nectarine, then cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to expand.
- Once set, give the pudding a good stir and portion it into serving bowls or jars.
- Top with additional blueberries, a drizzle of honey, and enjoy!
Notes
For a thicker pudding, let it sit longer in the fridge. Feel free to substitute the maple syrup with agave nectar or your preferred sweetener.
