This delightful Nectarine and Blueberry Chia Pudding combines the sweetness of ripe nectarines and fresh blueberries with the nutritious power of chia seeds for a healthy, delicious dessert.


Ingredients

  • 1 1/2 cup milk of choice
  • 6 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup blueberries
  • plus more for topping
  • 1 nectarine
  • chopped
  • 1/2 tsp cinnamon
  • honey drizzle on top

Instructions

  1. In a bowl, whisk together the milk, chia seeds, maple syrup, vanilla extract, and cinnamon until well combined.
  2. Stir in the blueberries and chopped nectarine, then cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to expand.
  3. Once set, give the pudding a good stir and portion it into serving bowls or jars.
  4. Top with additional blueberries, a drizzle of honey, and enjoy!

Notes
