- 4 to 6 beefsteak tomatoes peeled and cut into thin slices
- Salt and pepper to taste
- 1 tablespoon fresh chopped basil or 1 teaspoon dried basil
- 2 tablespoons chopped chives
- 1/2 cup mayonnaise
- 1 cup of grated cheese
Instructions
- Layer the sliced tomatoes in the baked pastry shell, sprinkling with salt, pepper, basil, and chives as you go.
- In a bowl, mix together the mayonnaise and grated cheese, then spread it over the tomatoes. Bake in the oven at 350°F for 30 minutes, until the top is golden and bubbly.
Notes
For added flavor, try using heirloom tomatoes. Let the pie cool slightly before slicing for cleaner pieces.
