Ingredients

Scale
  • 1 baked pastry shell (quiche or pie pan)
  • 4 to 6 beefsteak tomatoes peeled and cut into thin slices
  • Salt and pepper to taste
  • 1 tablespoon fresh chopped basil or 1 teaspoon dried basil
  • 2 tablespoons chopped chives
  • 1/2 cup mayonnaise
  • 1 cup of grated cheese

Instructions

  1. Layer the sliced tomatoes in the baked pastry shell, sprinkling with salt, pepper, basil, and chives as you go.
  2. In a bowl, mix together the mayonnaise and grated cheese, then spread it over the tomatoes. Bake in the oven at 350°F for 30 minutes, until the top is golden and bubbly.

Notes

For added flavor, try using heirloom tomatoes. Let the pie cool slightly before slicing for cleaner pieces.
