Description

This Mulberry Cheesecake is a delightful combination of creamy cheesecake and tangy mulberry topping, making it a perfect end to any meal.


Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter

melted

24 ounces cream cheese

softened

3/4 cup granulated sugar

3 large eggs

1 cup sour cream

1 teaspoon vanilla extract

2 cups fresh or frozen mulberries

1/3 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch (optional

for thickening)

1 tablespoon water (if using cornstarch)


Instructions

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed.
  • Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  • In another bowl, beat the cream cheese and 3/4 cup sugar until smooth. Add the eggs, one at a time, mixing well after each addition.
  • Stir in sour cream and vanilla extract until well combined.
  • Pour the cheesecake filling over the prepared crust and smooth the top.
  • Bake in the preheated oven for 30 minutes or until the edges are set.
  • Meanwhile, prepare the mulberry topping by combining mulberries, 1/3 cup sugar, lemon juice, and cornstarch (if using) in a saucepan. Cook over medium heat until the mixture is bubbly and slightly thickened.
  • Remove the cheesecake from the oven and let it cool slightly before topping with mulberry mixture.
  • Refrigerate the cheesecake for at least 4 hours before serving.

Notes

Make sure to let the cheesecake cool completely before refrigerating. For a smooth topping, mash the mulberries slightly before cooking.
