Ingredients
1.5 cups graham cracker crumbs
2 tbsp granulated sugar
6 tbsp unsalted butter melted
16 oz cream cheese softened
0.75 cup granulated sugar
1 tsp vanilla extract
2 Earl Grey tea bags steeped in 1/4 cup hot water cooled
0.5 cup sour cream
2 large eggs
1.5 cups mulberries fresh or frozen
2 tbsp water
2 tbsp sugar
1 tsp lemon juice
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs, 2 tbsp granulated sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of the prepared springform pan.
- In another large bowl, beat the softened cream cheese until smooth. Gradually add 0.75 cup granulated sugar and vanilla extract, mixing until creamy.
- Add the cooled Earl Grey tea, sour cream, and eggs, mixing just until combined. Be careful not to overmix.
- Pour the cheesecake batter over the crust in the springform pan.
- In a small saucepan, combine mulberries, 2 tbsp water, 2 tbsp sugar, and lemon juice. Cook over medium heat until the mulberries release their juices and become slightly thickened.
- Spread the mulberry mixture over the cheesecake batter.
- Bake for 30 minutes or until the center is set but still slightly jiggly. Remove from the oven and let cool.
- Chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
Notes
For best flavor, use fresh mulberries if available. Ensure the cheesecake is fully chilled for the best texture.
