  • 1/4 teaspoon ground nutmeg
  • 4 ounces cream cheese
  • softened
  • 1/4 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine grated zucchini, peanut butter, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake cools, prepare the frosting by beating cream cheese, peanut butter, powdered sugar, milk, and vanilla extract until smooth and creamy.
