  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Add the vanilla extract, beaten egg, and sugar; mix until well combined.
  6. Gradually fold in the flour until just combined. Do not overmix.
  7. If desired, fold in walnuts or pecans, cinnamon, and nutmeg.
  8. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
