  • 2 tablespoons sugar
  • 4 tablespoons melted butter
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 cups fresh or canned peaches sliced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 3 tablespoons cold butter cubed

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a muffin tin with cupcake liners.
  2. In a bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until well mixed. Press the mixture into the bottom of each lined muffin cup to create the crust.
  3. In a large mixing bowl, beat the softened cream cheese with 1/2 cup granulated sugar until smooth. Add in the eggs, vanilla extract, and sour cream, mixing until combined.
  4. In a separate bowl, stir together the sliced peaches, 1/4 cup brown sugar, 1 teaspoon cinnamon, cornstarch, and lemon juice until the peaches are well coated.
  5. Spoon the cream cheese mixture over the prepared crusts in the muffin cups. Top each cheesecake cup with a generous spoonful of the peach mixture.
  6. In another bowl, mix 1/2 cup all-purpose flour, 1/4 cup brown sugar, and 1/4 teaspoon cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the crumble over each cheesecake cup.
  7. Bake in the preheated oven for 25-30 minutes until the cheesecakes are set. Let them cool completely before serving.

Notes

These mini cheesecakes can be stored in the refrigerator for up to 3 days. You can also use canned peaches if fresh ones are not available.
