- 1 cup graham cracker crumbs

- 2 cups fresh or canned peaches sliced
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon cornstarch
- 1 tablespoon lemon juice
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 3 tablespoons cold butter cubed
Instructions
- Preheat your oven to 325°F (160°C) and prepare a muffin tin with cupcake liners.
- In a bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until well mixed. Press the mixture into the bottom of each lined muffin cup to create the crust.
- In a large mixing bowl, beat the softened cream cheese with 1/2 cup granulated sugar until smooth. Add in the eggs, vanilla extract, and sour cream, mixing until combined.
- In a separate bowl, stir together the sliced peaches, 1/4 cup brown sugar, 1 teaspoon cinnamon, cornstarch, and lemon juice until the peaches are well coated.
- Spoon the cream cheese mixture over the prepared crusts in the muffin cups. Top each cheesecake cup with a generous spoonful of the peach mixture.
- In another bowl, mix 1/2 cup all-purpose flour, 1/4 cup brown sugar, and 1/4 teaspoon cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the crumble over each cheesecake cup.
- Bake in the preheated oven for 25-30 minutes until the cheesecakes are set. Let them cool completely before serving.
Notes
These mini cheesecakes can be stored in the refrigerator for up to 3 days. You can also use canned peaches if fresh ones are not available.
