Delight in these Mini Peach and Cream Cheese Tarts, featuring a flaky crust filled with creamy cheese and topped with fresh peaches and a sweet honey drizzle.

- ¾ cup plus 2 tablespoons all-purpose flour
- 2 teaspoons granulated sugar
- ¼ teaspoon salt
- 4 tablespoons cold unsalted butter
- cubed or grated
- 3–4 tablespoons ice water
- ¼ teaspoon white distilled vinegar
- 1 tablespoon heavy cream for brushing
- Cinnamon sugar for sprinkling
- 1 fresh peach
- half sliced
- 3–4 ounces cream cheese
- room temperature
- 2 tablespoons honey
- 1 teaspoon lemon juice
- â…› teaspoon ground cinnamon
- â…› teaspoon ground ginger
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and mix until crumbly.
- Stir in the ice water and vinegar until the mixture forms a dough. Refrigerate for 15 minutes.
- Roll the dough out and cut it into circles to fit your tart pans. Press the dough into the pans.
- Pre-bake the tart shells for about 15 minutes until golden. Brush with heavy cream and sprinkle with cinnamon sugar.
- In a bowl, mix the cream cheese until smooth and spread it inside the tart shells.
- Top each tart with sliced peaches.
- In a small bowl, mix honey, lemon juice, cinnamon, and ginger. Drizzle over the tarts.
- Bake for an additional 10 minutes, then let cool before serving.
Notes
Make sure to let the cream cheese reach room temperature for easier spreading. You can also use other fruits if preferred.
