Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, melt unsalted butter over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and mixed mushrooms; cook until mushrooms are browned and tender.
- Add fresh thyme and all-purpose flour, stirring to combine. Cook for 1-2 minutes until flour is lightly golden.
- Pour in vegetable broth and heavy cream, stirring until the mixture thickens. Season with salt and black pepper to taste.
- Remove from heat and let cool slightly.
- Roll out the puff pastry and cut into circles large enough to fit your ramekins.
- Spoon the mushroom filling into each ramekin and top with a layer of Gruyère cheese.
- Cover with the puff pastry, sealing the edges. Brush the tops with beaten egg for a golden finish.
