Mini Macaroni and Cheese Bites are a delicious and easy-to-make snack that combines creamy cheese and crispy textures into bite-sized morsels perfect for any occasion.

- 12 oz. elbow macaroni
- 5 oz. garlic and herb cheese
- 2 1/2 cups shredded sharp cheddar cheese
- 2 tbsp. cold unsalted butter
- 2 large eggs
- 3/4 cups milk
- 1/4 cup sour cream
- pinch salt and pepper
- 2 cups crushed Ritz Crackers
- 6 tbsp. butter melted
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions, drain, and set aside.
- In a large mixing bowl, combine the cooked macaroni with garlic and herb cheese, shredded sharp cheddar cheese, cold unsalted butter, eggs, milk, sour cream, salt, and pepper. Mix until well combined.
- In a separate bowl, mix the crushed Ritz Crackers with melted butter and the additional shredded sharp cheddar cheese.
- Grease a mini muffin tin and sprinkle a small amount of the cracker mixture into each cup to form a crust.
- Spoon the macaroni and cheese mixture into each cup, filling them about 3/4 full.
- Top with the remaining cracker mixture.
- Bake in the preheated oven for 20-25 minutes or until golden brown and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
These bites can be made ahead of time and frozen. Just reheat in the oven when ready to serve.
