This Mediterranean Lentil Soup is a hearty and nutritious dish packed with flavor. Featuring green or brown lentils, a mix of mirepoix vegetables, and infused with smokiness from roasted tomatoes, it’s perfect for any day of the week.
Ingredients
- Green or brown lentils
- chopped celery
- carrots
- onions
- garlic
- fire-roasted tomatoes
- tomato paste
- fresh kale
- dried oregano
- basil
- cumin
- thyme
Instructions
- Rinse and drain the lentils, then set them aside.
- In a large pot, sauté the chopped onions, carrots, and celery in a drizzle of olive oil until they are softened.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the fire-roasted tomatoes, tomato paste, and dried herbs, cooking for a couple of minutes to combine.
- Add the lentils and 6 cups of vegetable broth to the pot, bringing it to a boil.
- Reduce heat and let the soup simmer for about 30 minutes, or until the lentils are tender.
- In the last 5 minutes of cooking, add in the chopped kale and stir until wilted.
- Taste and adjust seasoning if necessary, then serve hot.
Notes
Feel free to substitute the kale with spinach and adjust the spices to suit your taste. This soup freezes well for future meals.
