  • 11 ½ pounds boneless skinless chicken breasts or thighs diced into 1 inch pieces
  • 2 teaspoons Italian Seasoning divided
  • salt and pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves minced
  • ¼ cup flour
  • 2 tablespoons tomato paste
  • 68 cups chicken broth
  • 6 oz pasta
  • 1 cup heavy whipping cream
  • ½1 cup grated parmesan reggiano cheese
  • 2 ½3 cups fresh spinach

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken, season with 1 teaspoon Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through.
  2. Add the carrots, celery, onions, sundried tomatoes, and garlic. Sauté for about 5 minutes until the vegetables soften.
  3. Sprinkle the flour over the mixture and stir to coat the vegetables and chicken. Cook for another 2 minutes.
  4. Pour in 6 cups of chicken broth and add the tomato paste, stirring to combine. Bring the mixture to a boil.
  5. Add the pasta and cook for the time specified on the package until al dente.
  6. Lower the heat and stir in the heavy cream, grated parmesan, fresh spinach, and remaining Italian seasoning. Cook until the spinach has wilted and the cheese has melted.
  7. Taste and adjust seasoning with salt and pepper if needed. Serve hot and enjoy!

Notes

For a thicker soup, you may add more flour. Adjust the amount of chicken broth depending on your desired soup consistency.
