- 1 teaspoon olive oil
- 1–1 ½ pounds boneless skinless chicken breasts or thighs diced into 1 inch pieces
- 2 teaspoons Italian Seasoning divided
- salt and pepper to taste
- ½ cup diced carrots
- ½ cup diced celery
- ½ cup diced onions
- ¼ cup diced sundried tomatoes
- 3 garlic cloves minced
- ¼ cup flour
- 2 tablespoons tomato paste
- 6–8 cups chicken broth
- 6 oz pasta
- 1 cup heavy whipping cream
- ½–1 cup grated parmesan reggiano cheese
- 2 ½–3 cups fresh spinach
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken, season with 1 teaspoon Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through.
- Add the carrots, celery, onions, sundried tomatoes, and garlic. Sauté for about 5 minutes until the vegetables soften.
- Sprinkle the flour over the mixture and stir to coat the vegetables and chicken. Cook for another 2 minutes.
- Pour in 6 cups of chicken broth and add the tomato paste, stirring to combine. Bring the mixture to a boil.
- Add the pasta and cook for the time specified on the package until al dente.
- Lower the heat and stir in the heavy cream, grated parmesan, fresh spinach, and remaining Italian seasoning. Cook until the spinach has wilted and the cheese has melted.
- Taste and adjust seasoning with salt and pepper if needed. Serve hot and enjoy!
Notes
For a thicker soup, you may add more flour. Adjust the amount of chicken broth depending on your desired soup consistency.
