32 ounces cherry tomatoes or late summer tomatoes of choice

quartered or chopped into small bite-sized pieces

1 medium shallot

very finely sliced

2 cloves garlic

very finely chopped or grated

½ cup packed fresh basil leaves & tender stems

very finely sliced (roughly 1.25 ounces)

up to 1 teaspoon crushed red pepper flakes

as desired

1 large lemon

juiced (2–3 tablespoons juice)

¾ cup extra virgin olive oil

½ cup shaved parmesan

kosher salt & ground black pepper

to season


Instructions

  • Cook the capellini pasta according to package instructions until al dente. Drain and set aside.
  • In a large bowl, combine the chopped cherry tomatoes, shallot, garlic, basil, crushed red pepper flakes, lemon juice, olive oil, salt, and pepper. Stir well to combine.
  • Add the cooked pasta to the tomato mixture and toss gently until the pasta is evenly coated.
  • Let the pasta marinate for at least 20 minutes to allow the flavors to meld.
  • Before serving, sprinkle with shaved parmesan and adjust seasoning if needed. Serve warm or at room temperature.

Notes
