- 1 tablespoon olive oil
- 4–6 ounce boneless
- skinless chicken breast halves
- ½ teaspoon black pepper
- ¼ teaspoon salt
- ⅓ cup low-sodium chicken broth
- ⅓ cup pure maple syrup
- 2 teaspoons chopped fresh thyme divided
- 2 cloves garlic minced
- 1 tablespoon + 1 teaspoon cider vinegar
- 1 tablespoon + 1 teaspoon stone-ground mustard
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, mix together the chicken broth, maple syrup, thyme (reserve some for garnish), minced garlic, cider vinegar, and stone-ground mustard until well combined.
- Season the chicken breasts with black pepper and salt.
- Heat the olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the seared chicken to the prepared baking dish and pour the maple mustard mixture over the top.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the glaze is bubbling.
- Garnish with reserved thyme before serving.
