½ cup ripe mango puree
½ cup Greek yogurt
¼ cup mango juice
⅓ cup strawberry preserves
1 tbsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the softened butter and sugar until light and fluffy.
- Add in the eggs one at a time, beating well after each addition, then mix in the vanilla extract, mango puree, Greek yogurt, and mango juice until well combined.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- In a small bowl, mix the strawberry preserves and cornstarch to create the filling.
- Make an indention in the center of each cupcake and spoon in the strawberry filling.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
- Once baked, remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
For an added touch, top the cooled cupcakes with whipped cream or a mango frosting.
