6 Large Egg Yolks

½ cup Granulated Sugar

¼ cup Fresh Lime Juice

6 tbsp Unsalted Butter cold and cubed

1 tsp Lime Zest

Pinch of Sea Salt

Fresh Mango Cubes

Whipped Cream

Fresh Mint Leaves


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the Graham cracker crumbs, unsweetened shredded coconut, granulated sugar, melted butter, and fine salt. Mix until fully combined.
  • Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan to form the crust.
  • Bake in the preheated oven for 10 minutes or until golden and set. Remove from the oven and let cool.
  • While the crust cools, prepare the mango curd. In a saucepan, whisk together the mango purée, egg yolks, granulated sugar, and fresh lime juice over medium heat.
  • Continue to cook, stirring constantly until the mixture thickens and coats the back of a spatula.
  • Remove from heat and whisk in the cold cubed butter, lime zest, and sea salt until smooth and glossy.
  • Pour the mango curd into the cooled coconut crust, smoothing the top.
  • Refrigerate the tart for at least 4 hours, or until set. Serve chilled, topped with fresh mango cubes, whipped cream, and mint leaves.

Notes

Ensure the mango purée is well strained for a smooth curd and chill the tart for the best flavor and texture. Adjust sweetness as needed based on your mangoes.
