1/2 cup (115 g) unsalted butter
softened
1/2 cup (100 g) granulated sugar
1/4 cup (50 g) light brown sugar
1 large egg
1/2 tsp vanilla extract
1/4 cup (60 ml) mango purée (or rehydrated mango powder)
1 1/2 cups (190 g) all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (60 g) chopped dried mango (optional but adds chew)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Stir in the mango purée until evenly distributed.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the chopped dried mango.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a more intense mango flavor, consider using fresh mango purée or adding more dried mango. Store in an airtight container for up to a week.
